Confession time people!

Gather round.

Here it goes....



I don't like mint, peppermint, spearmint, sweetmint, however you call it, I don't like it! There I've said it and for a food blogger it is quite difficult to admit to something like that.

I tolerate it in savoury recipes when it is well hidden among other herbs and maybe in the occasional mojito, I am more of a Caipirinha girl anyway, and that's about it. I would never think of using mint to flavour my cakes and sweets. Unless, I was sort of forced and this is how it went down with this Chocolate Mint Bundt cake.


One Saturday morning at the beginning of the month, I was checking The #BundtBakers facebook page to see what the theme for December was. My husband happened to be sitting next to me on the sofa when I said, somewhat disappointed that most probably I won't be participating this month.

At this point I have to explain that George eagerly awaits these monthly contributions to my cooking groups as it means that he gets to eat cake everyday for at least a week until we finish everything up. So he was acting from pure self interest, I am sure, when he asked all concerned why I wouldn't. I told him that this month's theme is mint and since I am not a fan I don't think I will be able to make something worth eating. "But", he said, "I like mint, can't you make something with mint and chocolate like these After Eight chocolates"?   And that's when I got the idea to turn a favourite chocolate bundt cake recipe into something that every mint lover would adore. A Chocolate Bundt cake filled with cream cheese, chocolate chips and pieces of After Eight chocolate.  


I've made this cake in it's mint-less version, three times since we moved into this apartment. It was actually the first cake I baked in the apartment's very old and temperamental oven that cannot keep a stable temperature for more than 20 minutes, but it turned out very well. It is extra chocolatey and the cream cheese swirl in the middle makes it even more irresistible.

Gluten Free Chocolate Mint Bundt Cake
Adapted from Coffee Cakes by Lou Seibert Pappas
Serves 12
Ingredients
  • 220 gr (1 cup) cream cheese at room temperature
  • 50 gr (1/4 cup) sugar
  • 1 teaspoon vanilla essence
  • 1 egg at room temperature
  • 100 gr (2/3 cup) chocolate chips
  • 70 gr (8 pieces) After Eight Chocolate Mint Thins, chopped
  • 2 eggs
  • 400 gr (2 cups) sugar
  • 200 gr (1 cup) sunflower oil
  • 1 teaspoon vanilla essence
  • 450 gr (3 cups) gluten free flour 
  • 70 gr (2/3 cup) cocoa powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 tablespoons icing sugar
  • 1 teaspoon cocoa powder

Instructions
  1. Preheat oven to 160C/325F. Butter a 25cm/10in bundt pan and dust it with a little flour. 
  2. Make the cream cheese filling
  3. Cream the cheese, sugar and vanilla with a fork in a small bowl. Add the egg and mix it well. Stir in the chocolate chips and pieces of After Eight. Set aside.
  4. Combine the flour, cocoa powder, baking soda and salt in a bowl and mix them well. 
  5. Beat the eggs, sugar, oil and vanilla in a large bowl until the mixture becomes thick and smooth. 
  6. Add the flour mix to the egg mixture alternatively with the buttermilk and beat until smooth. 
  7. Pour half of the chocolate mixture into the pan. Spoon the cream cheese filling over and carefully spoon the remaining chocolate mixture over and smooth the top. 
  8. Bake the cake for 1 hour and 15 minutes. It is ready when a knife or cake tester inserted in comes out clean. 
  9. Let it cool in the pan for 15 minutes. Unmold and let it cool completely on a wire rack. 
  10. Combine 2 tablespoons of icing sugar with 1 teaspoon of cocoa powder and dust the cake through a sieve. 
Cook's Tips
  • I used only a few pieces of mint chocolate in the filling but if you want stronger mint flavour you can add a few drops of Mint Extract as well. 
  • I used my favourite gluten free flour mix to bake it but you can use any ready made gluten free flour mix which contains rice and potato flours.
  • If our kitchen is too hot store the cheese filling in the fridge.

Κέικ Σοκολάτας με Μέντα Χωρίς Γλουτένη
Εμπνευσμένο από το βιβλίο Coffee Cakes της Lou Seibert Pappas
Για 12 άτομα
Υλικά
  • 220 γρ τυρί κρέμα σε θερμοκρασία δωματίου
  • 50 γρ ζάχαρη
  • 1 κουταλάκι εσάνς βανίλιας
  • 1 αυγό σε θερμοκρασία δωματίου 
  • 100 γρ σταγόνες σοκολάτας
  • 70 γρ (8 κομμάτια) After Eight Chocolate Mint Thins, ψιλοκομμένα
  • 2 αυγά
  • 400 γρ ζάχαρη
  • 200 γρ ηλιέλαιο
  • 1 κουταλάκι εσάνς βανίλιας
  • 450 γρ αλεύρι χωρίς γλουτένη
  • 70 γρ κακάο
  • 2 κουταλάκια μαγειρική σόδα
  • 1/2 κουταλάκι αλάτι
  • 1 φλιτζάνι ξινόγαλο
  • 2 κουταλιές ζάχαρη άχνη
  • 1 κουταλάκι κακάο
Εκτέλεση
  1. Προθερμαίνουμε το φούρνο στους 160 βαθμούς. Βουτυρώνουμε και αλευρώνουμε μία φόρμα 25 εκατοστών. 
  2. Φτιάχνουμε τη γέμιση τυριού.
  3. Αναμειγνύουμε το τυρί, τη ζάχαρη και τη βανίλια με ένα πιρούνι σε ένα μικρό μπολ. Προσθέτουμε το αυγό και το αναμειγνύουμε καλά. Ρίχνουμε τις σταγόνες σοκολάτας και τα κομματάκια After Eight και αφήνουμε στην άκρη. 
  4. Σε ένα μπολ αναμειγνύουμε καλά το αλεύρι, το κακάο, τη σόδα και το αλάτι. 
  5. Χτυπάμε τα αυγά, τη ζάχαρη, το λάδι και τη βανίλια μέχρι να γίνει πηχτό και λείο. 
  6. Προσθέτουμε το μείγμα του αλευριού εναλλάξ με το ξινόγαλο και χτυπάμε καλά μέχρι το μείγμα να γίνει λείο.  
  7. Ρίχνουμε μισό από το μείγμα στη φόρμα. Προσεκτικά με ένα κουτάλι βάζουμε από πάνω το μείγμα του τυριού και καλύπτουμε με το υπόλοιπο σοκολατένιο μείγμα. Ισιώνουμε την επιφάνεια και βάζουμε στο φούρνο.  
  8. Ψήνουμε για 1 ώρα και 15 λεπτά  
  9. Το αφήνουμε να κρυώσει μέσα στη φόρμα για 15 λεπτά και μετά το αναποδογυρίζουμε και το αφήνουμε να κρυώσει καλά.  
  10. Ανακατεύουμε 2 κουταλιές ζάχαρη άχνη και 1 κουταλάκι κακάο και πασπαλίζουμε το κέικ με ένα σουρωτήρι. 

Cook's Tips
  • Χρησιμοποίησα μόνο λίγα κομμάτια σοκολάτας με μέντα αλλά αν θέλετε εντονότερη γεύση μπορείτε να προσθέσετε μερικές σταγόνες εσάνς μέντας.  
  • Χρησιμοποίησα το δικό μου μείγμα αλευριού χωρίς γλουτένη αλλά μπορείτε να χρησιμοποιήσετε οποιοδήποτε άλλο θέλετε που να έχει στη σύνθεση του αλεύρι ρυζιού και πατάτας.
