Vegan and Gluten Free Apple and Raisin Muffins - Μαφινς με Μηλο και Σταφιδες Χωρις Γλουτενη

And just like that, Easter is over and there are 4 more months until we move to Athens. I thought that I would never say it, but I feel happy we are going back after 8 years away from home. And even though Athens is not where my actual home is - born and bred in Grevena - I am now determined to make it. 

Athens is vast. 4.5 million people vast. Most of the time it feels like a jungle and I am saying this having lived in London for a good 8 years. You need time to adjust and a sanctuary to recuperate and fight off the craziness of the streets. Mine is going to be close to the sea. I've decided. There's only one small problem...I haven't found it yet.  We didn't have much time to look for an apartment - too much eating and drinking and meeting with friends and relatives got in the way of arranging viewings with estate agents - but I've made up my mind. Yes, this time we are going South. Close to the sea. 


Off course there are so many other things to take care before our August move but for now I am going to concentrate on making this blog "Greek friendly" meaning that I have to sit down and translate every post I've written so far (thank God there are only about 150 of them - laziness  and procrastination are not always bad) and find a way to incorporate the Greek version into each post.  So for those of you who are reading my posts in English, please continue and don't be put off if some parts of the post read like Greek to you - (I cannot seem to stop making these tragically not-funny word jokes! It's a disease I'm telling you!) -  


Now, on to other news...

I made muffins. Lovely, sweet and light muffins with fresh apples and raisins and a tiny bit of jam inside them. A whole breakfast in a paper case as Dunja Gulin says in her wonderful cookbook "The Vegan Baker"where I found this recipe. Dunja is Croatian but her cookbooks, there are two more, Raw Food Kitchen and The Vegan Pantry, are written in English. Even though I am not vegan, I loved all the recipes I've made so far. Muffins and cakes and pies, they were all delicious and you will be seeing more them here soon. 


The recipe is dead simple. Two bowls, one for the wet, one for the dry, mix and pour in paper cups. I've made some minor changes to make them gluten free and refined sugar free by using plum jam made with stevia and agave and my favourite gluten free flour.

I can understand if you feel a little apprehensive about these muffins. Vegan means no eggs and no dairy and to top that there is no sugar, do these muffins have any taste at all? Believe me when I tell you that they have plenty and it is amazing! The apples and the raisins - not to mention the jam - give them enough sweetness to satisfy your sweet tooth and keep your conscience clean. Make them and munch on them in the morning for your breakfast, as Dunja suggests or if you are like me, as an afternoon pick-me-up with a cup of steaming red Rooibos tea!

Vegan and Gluten Free Apple and Raisin Muffins
Adapted from The Vegan Baker by Dunja Gulin
Makes 9 - 12

Ingredients
  • 250 gr (2 and 1/4 cup) all purpose gluten free flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 300 ml (1 and 1/4 cup) almond milk
  • 130 gr (1/2 cup) brown rice syrup
  • 100 gr (1/2 cup) coconut oil
  • Juice and zest from 1 un-waxed lemon
  • 1 apple, peeled, cored and cut into small cubes
  • 60 gr (1/2 cup) raisins
  • 100 gr (4 tablespoons) plum jam 
Instructions
  1. Preheat oven to 180C/350F.
  2. Line a 12-hole muffin pan with paper cases
  3. In a bowl shift together the flour, baking powder, salt and cinnamon and mix them well.
  4. In another bowl mix together the milk, brown rice syrup. coconut oil lemon juice and zest. 
  5. Pour the dry ingredients over the wet and mix gently with a spatula or a wooden spoon until they combine. Be careful not to over mix them.
  6. Fold in gently the raisins and the apples.
  7. Fill 9 of the muffin cases half full and put 1 teaspoon of the jam in each. Cover with more of the muffin batter until the cases are 3/4 full.
  8. If you have more mixture left fill more muffin cases in the same way. 
  9. Bake for 30 minutes or until they are golden.
  10. Remove from the oven, let them stand for 5 minutes in the muffin pan and then move them on a wire rack to cool down. 

Μάφινς με Μήλο και Σταφίδες Χωρίς Γλουτένη



Και κάπως έτσι πέρασε το Πάσχα και δεν μένουν παρά μόνο 4 μήνες μέχρι να επιστρέψουμε στην Αθήνα. Πίστευα ότι δεν το έλεγα ποτέ, αλλά αισθάνομαι χαρούμενη που θα μετά από 8 χρόνια μακριά γυρνάμε πίσω…στο σπίτι. Και παρόλο που η Αθήνα δεν είναι το πραγματικό μου σπίτι – Γρεβενιώτισσα γαρ – είμαι αποφασισμένη αυτή τη φορά να την κάνω. 

Αυτό που χρειάζομαι είναι ένα καταφύγιο για να κρύβομαι από την τρέλα της πόλης. Και αποφάσισα ότι θα είναι κοντά στη θάλασσα. Το μόνο πρόβλημα είναι ότι δεν το έχω βρει ακόμα. Καλά που ήρθαμε 10 μέρες το Πάσχα αλλά μεταξύ μαγειρίτσας, οβελία, και λοιπών  τραπεζωμάτων με συγγενείς και φίλους δεν μας έμεινε και πολύ χρόνος για να ψάξουμε. Αλλά εγώ αποφάσισα. Πάμε Νότια. Κοντά στη θάλασσα. 

Υπάρχουν βέβαια πολλά πράγματα που πρέπει να γίνουν και να κανονιστούν πριν την μετακόμιση του Αυγούστου, αλλά προς το παρόν θα ασχοληθώ με το να προετοιμάσω το blog μου για την μετακίνηση στην Ελλάδα. Πρέπει να του «μάθω να μιλάει Ελληνικά».

Κάνω την αρχή λοιπόν σήμερα και σιγά – σιγά θα μεταφράζω τις παλαιότερες αναρτήσεις για να μπορούμε επιτέλους να μιλάμε στην γλώσσα μας!


Ας μιλήσουμε λοιπόν τώρα για μάφινς. Όχι όποια κι όποια, αλλά αυτά εδώ που έφτιαξα πριν από μερικές μέρες. Όμορφα, γλυκά και ελαφριά, με κομματάκια μήλου και σταφίδες και μια έκπληξη μέσα τους….μαρμελάδα δαμάσκηνο! Είναι vegan – δεν έχουν αυγά και γάλα – και χωρίς γλουτένη και αν αντικαταστήσετε την μαρμελάδα με αυτή εδώ που δεν έχει ζάχαρη τότε θα είναι και χωρίς ζάχαρη. Έχουν όμως απίθανη γεύση και είναι αρκετά γλυκά ώστε να ικανοποιήσουν και τον πιο απαιτητικό γλυκατζή χωρίς να βαρύνουν με τύψεις (όσο να’ ναι καλοκαίρι έρχεται).  

Όπως λέει και η αγαπημένη σεφ Dunja Gulin, είναι ένα ολόκληρο πρωινό σε ένα χάρτινο θηκάκι! Η Dunja είναι Κροάτισσα αλλά μπορείτε να βρείτε το βιβλίο της “The Vegan Baker" απ’ όπου πήρα αυτή τη συνταγή καθώς και τα άλλα δύο βιβλία της Raw Food Kitchen και The Vegan Pantry στα αγγλικά. Και παρόλο που δεν είμαι vegan, λάτρεψα όλες τις συνταγές που έχω δοκιμάσει ως τώρα από το βιβλίο της.  Γιατί είναι όλες εύκολες και απίστευτα γευστικές!

Έτσι είναι και αυτή εδώ. Πανεύκολη, με μηδενικό χρόνο προετοιμασίας και μπορείτε να ψήσετε  το βράδυ πριν πέσετε για ύπνο και το πρωί να τα έχετε έτοιμα για το πρωινό σας.

Μάφινς με Μήλο και Σταφίδες Χωρίς Γλουτένη
Εμπνευσμένη από το βιβλίο The Vegan Baker της Dunja Gulin
9 – 12 μάφινς

Υλικά
  • 250 γρ αλεύρι για όλες τις χρήσεις χωρίς γλουτένη 
  • 2 ½ κουταλάκια του γλυκού μπέικιν πάουντερ
  • ¼ κουταλάκι του γλυκού αλάτι
  • 1 κουταλάκι του γλυκού κανέλα 
  • 300 ml γάλα σόγιας ή αμυγδάλου 
  • 130 γρ σιρόπι καφέ ρυζιού 
  • 100 γρ λάδι καρύδας
  • Ξύσμα και χυμός από ένα ακέρωτο λεμόνι 
  • 1 μήλο καθαρισμένο και κομμένο σε κυβάκια 
  • 60 γρ σταφίδες
  • 100 γρ μαρμελάδα δαμάσκηνο χωρίς ζάχαρη

Εκτέλεση
  1. Προθερμαίνουμε το φούρνο στους 180C.
  2. Βάζουμε χάρτινες θήκες σε ένα ταψί για μάφινς με 12 τρύπες.
  3. Κοσκινίζουμε το αλεύρι, το μπέικιν πάουντερ, το αλάτι και τη κανέλα σε ένα μπολ και να ανακατεύουμε να ενωθούν. 
  4. Σε ένα άλλο μπολ βάζουμε το γάλα, το σιρόπι καφέ ρυζιού, το λάδι, το χυμό και το ξύσμα του λεμονιού και τα ανακατεύουμε καλά.  
  5. Ρίχνουμε σιγά – σιγά το μείγμα του αλευριού μέσα στο μπολ με τα υγρά και ανακατεύουμε πολύ ελαφρά με μια σπάτουλα σιλικόνης μέχρι να ενωθούν. 
  6. Προσέχουμε να μην τα ανακατέψουμε πολύ γιατί τα μάφιν θα γίνουν σκληρά. 
  7. Προσθέτουμε τα κυβάκια του μήλου και τις σταφίδες.
  8. Γεμίζουμε 9 χάρτινες θήκες με το μείγμα μέχρι τη μέση και βάζουμε από πάνω 1 κουταλάκι του γλυκού μαρμελάδα στο καθένα τους. Τα σκεπάζουμε με λίγο ακόμα μείγμα μέχρι να φτάσουν τα ¾ της θήκης. 
  9. Αν μας περισσεύει μείγμα γεμίζουμε και άλλες χάρτινες θήκες με τον ίδιο τρόπο. 
  10. Ψήνουμε για 30 λεπτά ή μέχρι να ροδίσουν.
  11. Τα βγάζουμε από τον φούρνο και τα βγάζουμε να κρυώσουν πάνω σε σχάρα.
